Cheesy Broccoli Mini Quiches (Gluten & Dairy Free)

These cheesy broccoli mini quiches have endless variations. Try them with zucchini, mushrooms or onions, add herbs and spices or your choice of meat. My boys love these with ham or chicken apple sausage.
  • 6 eggs (organic or pasture-raised, if possible)
  • 3 T. non-dairy milk of choice (almond, coconut)
  • ½ c. All-Purpose Gluten-Free Flour
  • ⅔ tsp. Tapioca Flour
  • ½ tsp. Aluminum-free baking powder
  • ½ cup chopped broccoli
  • 1 C. shredded non-dairy cheese (I recommend Daiya brand)
  • Optional: seasoning of your choice, to taste (I love a blend like herbs de provence)
  1. Preheat oven to 350F. Grease 1 mini muffin pan (with 24 cups).
  2. In a medium bowl, beat the eggs.
  3. Stir in the milk, flours, baking powder.
  4. Add broccoli, cheese and optoinal seasonings.
  5. Spoon into greased muffin cups.
  6. Bake for 12-16 minutes in a preheated oven.
  7. Allow to cool, and then remove carefully with a knife or spatula.
