Sauteed Swiss Chard in Curried Coconut Milk

A dish to turn the skeptics into lovers! The coconut milk and curry make the swiss chard sweet with a kick, in a combination that is purely divine!
  • 1 teaspoon coconut oil
  • 1 onion, sliced
  • 1 large leek, sliced
  • ½ cup coconut milk
  • 1 bunch Swiss chard, thinly sliced
  • 1 teaspoon curry powder
  • ½ teaspoon salt
  • 1 teaspoon black pepper
  1. Warm a large sauté pan over medium/low heat.
  2. Add coconut oil.
  3. When the pan is hot, add onions and leeks.
  4. Sauté for about 5 to 7 minutes until the onions and leeks are soft.
  5. Add coconut milk, Swiss chard, curry powder, salt, and pepper.
  6. Sauté for an addition 3 minutes until the Swiss chard is wilted.
  7. Serve immediately.
