Well, if you have little ones in the house, you know that sometimes you have to muster up all the extra cheeriness you can! A sour morning face can usually be turned to smiles and laugther with just a wee bit of silliness.

This past week was spring break for us here in Austin, and the time change has my boys sleeping until the time we usually leave for school. So this St. Patrick’s Day, I’m infusing my boys breakfast with a good dose of cheer.  I’m pretty sure I’m going to need all the help I can get!

So silly sayings, rainbows and shamrock shakes it is!

Shamrockin' Breakfast

This breakfast is about as nutritious as it gets. From the vitamin infused fruits to the protein rich eggs to the nourishing fats from the coconut milk and avocados in the smoothie. And mixing spinach into the smoothie is a great way to get extra greens into your kiddos. They won’t even taste it, and it is chock full of nutrients.

A note about spinach: it contains a compound called oxalic acid, which blocks the absorption of calcium and iron. Cooking it reduces that power, but since we are eating it raw here, it’s always important to pair it with foods rich in vitamin C. I’ve got you covered here with the canteloupe and kiwi.

Making the rainbow is really easy. Wash your fruit, cut the ones that require cutting, and arrange. Scramble 2 eggs and you have the perfect fluffy clouds!

Here are some ideas of good fruits to use for your rainbow:

Red – raspberries (strawberries, pomegranates, watermelon, red grapes)

Orange – canteloupe (oranges, peaches, apricots)

Yellow– banana (pineapple, nectarines, mangos)

Green – kiwi (green grapes, honeydew melon, avocado)

Blue – blueberries

Purple – purple grapes (blackberries, raisins, plums)

Serving Size: I put one egg on each side, and the rainbow pictured should be the perfect size for my boys (6 and 2) to split for breakfast. Along with their shamrock shake, that is!

Longing for a Shamrock Shake this St. Patty's Day, but not wanting the excessive amounts of processed sugars and food coloring in the drive through variety? This shake is made from nourishing, real food, and is not just healthy but delicious!
Recipe type: Snack, Breakfast
Cuisine: Paleo, Vegan
Serves: 2
  • 1 C. coconut milk (I recommend Native Forest)
  • 1 medium avocado
  • ½ C. lightly packed mint leaves
  • 1 C. spinach
  • 1-2 T. honey (maple syrup for vegans)
  • 1 tsp. Vanilla extract
  • 1 C. crushed ice
  1. Place all ingredients in high powered blender.
  2. Blend to desired consistency.
  3. Enjoy the delciousness - it tastes like minty soft serve ice cream!
  4. Serving Suggestion: I Pairs well with a rainbow of fruit with scrambled eggs for the clouds. A complete Shamrockin' Breakfast to fuel your kids day!

I hope your kids (and you) enjoy it! My husband and I were the taste testers, and the shake tastes like minty soft serve ice cream! YUM!!!
